Russian Friday – Farmers Cheese (Low Fat Version)

Ladies, happy International Women’s Day! Let it be the most beautiful spring day filled with many smiles! My daughter and I are totally prepared to be admired and cherished for the next 24 hours! No doubt the husband and the son are ready to deliver! Wink-wink!

As always, feeling a bit nostalgic this day, I’m putting together a recipe from my homeland.  OK, I posted it before, but my mom informed me there is a low fat version that works just as well! So, here is a low fat Russian farmers’ cheese. It could be enjoyed on its own, sprinkled over your salads, stuffed into huge dumplings, baked with, and the list goes on and on.

Don’t be intimidated by the word “cheese”. It’s very easy to make, and requires only about 15 minutes of hands-on time!

Low Fat Farmers Cheese

This homemade cheese is used in so many Russian dishes, there would be enough to fill a cook book. Its consistency is very similar to goat cheese, but the flavor is much milder.

Ingredients

  • 3 liters fatfree milk
  • 2 tbs low-fat sour cream

Directions

  1. Combine milk and sour cream in a large jar (I used 3 Liter glass canning jar). Leave at a room temperature to ferment for 12-24 hours). Cover with a lid but don’t clamp it.
  2. When the milk turns into a clabber of hair-jell-like consistency, the cheese is ready to be made.
  3. Fill a large pot 1/2 way with water and warm it up on the stove.
  4. When the water is almost boiling (about 180° F /approx. 80º C or higher) carefully place the jar with clabber into the pot. It’s ok if the water is below the sour milk level. Let it heat up for about 10 minutes. The milk will start separating into curds (solid) and whey (liquid).
  5. Line up a large colander with a large cheese cloth folded twice. Carefully dump the milk mixture into it and drain. You may have to use a spoon to empty the jar. Tie a knot with a cheese cloth and hang it above a dish or your kitchen sink for a couple hours.
  6. If you don’t fully drain it, the farmers cheese will be very soft and tender, ready to eat.
  7. A drier farmers cheese is perfect for cooking.

Tips

  • Keep an eye on your fermentation process. Try a little bit of the clabber – it should have a pleasant slightly sour taste. Too long of a fermentation could cause bitter clabber; the cheese made with it would have an unpleasant taste.
  • The farmers cheese should be stored in the fridge for a few days, and could be frozen for up to 1 month.

Russian Friday – Poppy Seed Roll

Once again, we took a short vacation, and this mom’s separation from her kitchen resulted in a serious baking outburst. So, my New Year’s resolutions have been successfully shipped to the carb heaven, where they will probably remain sugar-high-and-all for the next 10 months.

On a brighter note, this blog has reached 100,000 hits; which, I think, is worth a celebration!  So, Russian Friday it is – carbohydrates galore!

POPPY SEED ROLL

INGREDIENTS:

POOLISH:

  • 1.5 cup milk, lukewarm
  • 2 tsp active dry east
  • 1 tbs sugar
  • 160 g unbleached all-purpose flour

DOUGH:

  • 2 eggs
  • 1cup sugar
  • 50 g butter, melted and cooled to the room temperature
  • 600 g unbleached all-purpose flour
  • 1 (9 g) bag  vanilla sugar
  • ½ tsp salt

FILLING:

EGG WASH:

  • 2 egg yolks
  • 2 tbs water

Yields: 2 rolls

DIRECTIONS:

Make poolish: whisk 2 cups of flour with milk and sugar with yeast, cover and let raise for about 1 – 1,5 hours.  The poolish is ready after it reaches its peak height and drops.

Mix the dough: whisk eggs, sugar, salt, and butter together till everything is dissolved.  Add the mixture to the poolish.  Slowly add sifted flour.  Mix to incorporate all the ingredients.  Place the dough on a floured surface and knead (adding flour, if needed) till the dough stops sticking to your hands – for about 10 minutes.

Place into an lightly oiled bowl, cover, and let rest for another hour.

Make the filling: mix sugar with poppy seeds , cover with milk and bring to boil.  Simmer for about 10-15 minutes. Blend in a food processor. Let cool down before spreading.

Make the rolls: divide the dough in to 2 halves. Working with each half separately, roll the dough into a 14 x 21 inch ((35 x 52 cm) rectangle about 0.2 inch (4-5 mm) thick. Spread half of the filling over the dough, leaving 1/2 inch (1.5 cm) edge.  Roll the dough into a cylinder, place it the seam side down on a baking sheet, covered with parchment paper   Make a wheel out of it, carefully pressing the edges together. Cover with a towel and let rest for about 15 minutes.

Meanwhile preheat the oven to 375⁰F/190⁰C, position the rack in the middle.

Prepare the wash: whisk the yolks with water.

Score the rolls, cutting the outer edges through.  The cut should be about 2/3 rd-s of the width of the cylinder.  Repeat the cuts every inch (3 cm), and slightly twist the edges facing them up. Brush the top of the roll with the wash and place in the oven.  Bake for 20-25 minutes until golden-brown. Let cool on a wire rack before serving.

Repeat with the remaining dough.

Russian Friday – Blini With Cabbage Stuffing

Don’t you love eggs?!?  Hmmmmm… all those eggs after Easter – when you end up with a dozen (or more) of them!  Hooray!  Boiled eggs for breakfast! Yeay! Boiled eggs for lunch!  Boiled eggs today! Boiled eggs tomorrow! Deviled eggs! Yeeey!

Here is one of those Russian dishes designed to be complimented by the texture of a boiled egg, though it hides the white protein and yellow cholesterol so you wouldn’t even know they are there!

BLINI WITH CABBAGE STUFFING

INGREDIENTS:

  • 1 recipe of French crepes
  • 1 small yellow onion, diced
  • 1 medium carrot, peeled and shredded,
  • 1 small cabbage, finely shredded
  • 2-3 boiled eggs, peeled, and cut into small cubes
  • 2 garlic cloves, peeled and finely cut
  • Salt, pepper to taste

DIRECTIONS:

Make crepes as directed in the recipe.

Make the stuffing.  On a frying pan, sauté onions till golden and soft, add carrots and cabbage, and cook till cabbage is very soft and loses half of its volume. Mix in the eggs and garlic, and add salt and pepper and/or other favorite seasonings.

Let the stuffing cool and then fold it into the crepes.

For a healthier option – eat as is or warm it up in the oven or microwave.  For a tastier version – fry the stuffed crepes on both sides till crispy.

Make ahead: wrap each bundle in a plastic wrap, and store in a zip-lock bag for up to 3 months.
